Ingredients

For the salad

  • 4 oz macaroni pasta
  • 2 tbsp red onion peeled and minced
  • 1/2 cucumber chopped
  • 1 stem celery minced
  • 1 clove garlic peeled and minced
  • 2 dill pickles chopped
  • 1 tbsp capers drained and rinsed
  • 1 small bunch parsley chopped

For the sauce

  • 4 tbsp vegan mayonnaise
  • 2 tbsp pickle juice
  • 1 tsp mustard
  • 1 tbsp olive oil
  • salt and pepper

Instructions

  • Cook the macaroni according to packaging instructions. Drain and rinse in cold water.
  • Mix the macaroni with the onion, cucumber, celery, garlic, pickles, capers, and parsley. Chill until ready to serve.
  • Add all the ingredients for the sauce to a jar with a screw cap lid. Put the lid on tightly and shake until emulsified. Chill until ready to serve.
  • Combine the salad with the sauce and serve immediately.
