Mie Goreng

If your weeknight dinner routine has fallen into a bit of a slump, let me introduce you to the ultimate flavor rescue: Mee Goreng. This iconic Indonesian street food classic is the definition of sweet, savory, and spicy perfection, all wrapped up in bouncy noodles. It is incredibly fast to whip together, completely customizable, and packs the kind of bold, comforting punch that makes you want to lick the wok clean. Forget ordering takeout—once you learn how to make this dynamic dish at home, it will easily become your absolute go-to craving for busy nights!

What is Mee Goreng?

Literally translating to “fried noodles,” Mee Goreng (also frequently spelled Mie Goreng in English) holds a legendary, sacred place in the culinary canon of Indonesia. Walk down any bustling street in Jakarta or Bali, and you’ll find vendors tossing these noodles over roaring woks, filling the night air with an irresistible aroma.

While it shares some DNA with other Southeast Asian stir-fry heavyweights like Thailand’s Pad See Ew or Malaysia’s Char Kway Teow, it stands completely distinct thanks to its unique flavor profile. Historically influenced by Chinese immigrants who brought wheat noodles to the region centuries ago, locals pimped the dish by infusing it with their own indigenous ingredients, most notably kecap manis (sweet soy sauce). The result is a beautifully complex balance of caramelized sweetness and savory depth that makes it a true national treasure and a globally beloved comfort food staple.

The Components of Mee Goreng

One of the things I absolutely adore about this dish is how incredibly unpretentious it is. This is a meal traditionally designed for instant noodles, meaning there is absolutely no need to buy anything fancy or find a specialty market—just regular curly egg noodles from your pantry are absolutely perfect for catching all that glorious sauce.

The structural backbone of the stir-fry relies on a handful of fresh, crisp vegetables. I chose shredded green cabbage and a generous handful of earthy bean sprouts, which provide a fresh crunch to contrast the soft, bouncy texture of the noodles. I’m also adding delicate, golden egg ribbons throughout the dish to add a lovely layer of richness to every bite – a classic addition to the dish.

How to Make Mee Goreng

Let’s start by talking about the special sauce, because it is the absolute soul of the dish. It’s very easy to make from standard Asian pantry ingredients like soy sauce, fish sauce, and sesame oil, so you won’t need to make a special trip to an Asian grocery store. And let me reassure you right now: the inclusion of tomato ketchup in the sauce list is not a mistake! It provides a perfect hit of acidity and vinegary sweetness that beautifully balances the rich, savory elements.

Like all great stir-fries, it’s best to have all your ingredients chopped, measured, and fully prepared before you ever start cooking, because the cooking itself is so incredibly quick. We start by making a thin omelet in the wok, rolling it up, and slicing it into those signature egg ribbons.

Set those aside, then crank the heat back up to fry your aromatics like garlic and shallots. Next, toss in your vegetables and protein, and finally drop in the cooked noodles and egg ribbons.

Finishing Mee Goreng

For heat, I’m using sambal oelek, a traditional Indonesian chili paste made from crushed raw red chilies and salt. It is special because it offers a pure, bright, unadulterated chili slap without heavy garlic or vinegar flavors altering the dish. That said, if you can’t find it, you can easily sub in any other favorite hot sauce, and it will still be incredibly good.

And when it comes to adding an additional protein, the choice is entirely up to you! For this specific recipe, I chose chicken, just because I had some leftover shredded chicken in the refrigerator that needed to be used up. However, sliced beef or pork work beautifully, and succulent shrimps are also very typical in traditional street-food versions. My vegetarian friends can easily swap the meat out for cubes of fried tofu or crispy tempeh, both of which soak up the magnificent flavors like a sponge. It is the ultimate “clean out the crisper drawer” meal that still manages to feel incredibly special.

Pour over that glossy, magical sauce, give it a vigorous toss until everything is beautifully caramelized, and you are ready to serve!

Traditional Toppings to Try

To really lean into that authentic Indonesian street-food experience, I highly recommend playing around with some traditional toppings. A heavy scattering of bawang goreng (crispy fried shallots) is an absolute must for an extra hit of savory crunch right at the end. Serving the noodles with a few slices of fresh cucumber and tomato on the side adds a wonderfully cooling, refreshing contrast to the spicy heat. You’ll also frequently see it accompanied by crunchy krupuk (shrimp crackers) for dipping, a few spicy pickled bird’s eye chilies, or even crowned with a glorious, crispy-edged fried egg with a perfectly runny yolk.
