We all love a good creamy mashed potato, but have you ever had a white bean mash? It’s just as creamy, rich, entirely delicious, and even good for you! Plus it comes together much quicker than any vegetable mash will, making it perfect for a last minute addition on a busy night.
It’s something we’ve been enjoying lately with a lot of different dinners. Having a healthy, year-round side dish that only takes five minutes of my time has been great. One of my favorite things to serve it with is my herb-crusted salmon, but the options are actually endless.

White beans are a fabulous neutral flavor to build on, and this recipe uses citrus and herbs to build a creamy mash that the whole family will love.

- Unsalted butter – If you only have salted, just watch how much you add to the recipe.
- Garlic clove – just one minced clove is the perfect amount.
- Lemon zest – After zesting save the juice for a dessert like my lemon iced plum cake.
- White beans – You’ll just need one can to serve two people. I used cannellini beans for this recipe.
- Salt & pepper – Both to taste
- Fresh thyme – If you don’t have it, dried thyme or dried rosemary could also work.
- Water – Just a few tablespoons to get it to the perfect creamy texture.
Instructions
To make these flavorful mashed white beans you only need about 5 minutes and a saute pan. It’s so easy! Start by combining the butter with the lemon zest and garlic in a warm pan. It only needs a minute or two to cook. When everything is fragrant, it’s ready for the next step.

Add in the beans, thyme, water, salt, and pepper and stir to get everything warm. Then using a potato masher, or even just a fork, mash it all together until creamy. If it’s too thick for your tastes, add another tablespoon or two of water.

Lemon and Thyme White Bean Mash
Ingredients
- 2 tablespoons (30g) unsalted butter
- 1 garlic clove , minced
- zest of 1 lemon
- 1 14 oz. (400ml) can white beans , drained and rinsed (I used cannellini beans)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon fresh thyme leaves
- 2 tablespoons (30ml) water
Instructions
- Heat the butter in a pan over medium-high heat. Add the garlic and lemon zest, and sauté stirring often for about 1 – 2 minutes, or until the garlic and zest become fragrant.
- Add the beans, salt, black pepper, thyme, and water to the pan and stir over medium-low heat until warmed through. Then, roughly mash the beans using a fork or potato masher. If the mixture looks a bit dry, add more water. Remove from heat and serve.
