Sunchoke Tips
Before you get cooking, I want to share a few essential tips about choosing, preparing, and storing sunchokes so you can maximize their flavor and how long they last.
- Go for firm, unblemished tubers in the fall through winter – Sunchokes are their best after the first cold fall weather. Avoid soft spots, black or green discoloration, and any that have started to sprout.
- Use within 2 weeks – They will not last long like other root veggies. Keep them in a sealed bag or container in the fridge until ready to use.
- Wash them well – Dirt hides in the knobby areas of a sunchoke. Scrub them with a vegetable brush to remove it, and use a paring knife to clean up hard-to-reach spots if needed.
- No need to peel, but wait to slice – Skip peeling the thin, edible brown skin unless you’re making a puree or soup you’d like to keep white. Once cut, the flesh will oxidize, so make sure you’re ready to cook or have acidulated water ready nearby.
