I am not going to judge those people who skip breakfast but I can‘t imagine my life without it. Where to get the energy from? A cup of coffee is only a short-term answer.
My body desperately needs some nutrients early in the morning. Protein or carbs it doesn‘t matter, as long as they fuel my body on and make me move.
To be frank, not such a long time ago my breakfast used to be anything but healthy. Sandwiches, toasts with melted cheese all over them, sometimes even fried eggs with bacon, you name it.
Thankfully, I decided to change my approach and now my morning usually starts with a bowl of oatmeal. I still indulge myself with something more naughty on weekends like these CRAZY delicious Syrniki. No more bacon, though!
Oatmeal is awesome and I like that it‘s highly customizable. Berries, fruit, dried fruit, seeds, all these things can be mixed in to make your porridge more interesting and delicious. I‘m adding everything that is in season at that moment. This week it‘s strawberries and papaya (unfortunately the latter is temporary as our vacation in Tenerife is coming to an end and we, obviously, don‘t have such fruit in Lithuania).
However, I would still love to have more variety and have a break from oatmeal from time to time.
I was pretty sure that there are plenty of other light and healthy breakfast options out there I couldn‘t think of. A few days ago I browsed through hundreds of food blogs and threw together a brilliant (sorry for bragging but it‘s really good) collection of light breakfast ideas!
