My friends and family often ask me how I decide which recipe to make for the blog. Usually, it’s a mix of things. I hear something / see something / read about something that makes my brain work and as a result, an idea is born in my head. Yup, that simple. There is no big secret that I am hiding under my pillow!
Like, for example, today’s recipe. Three things led to it.
First, me and my hubby, we decided to spend a romantic evening with a glass of wine and a nice movie yesterday. What do you need for that? A bottle of wine and a movie, obviously, ha ha. But you also want something to complement the wine, right? Some cheese or an appetizer. I expressed my love for appetizers many times on the blog so it was my time to shine and make something really good for our evening menu.
Then we went to a small local fruit and veggie shop we visit a few times every week to stock up on some greens and refill our fruit bowl. While we are in Tenerife we try to eat as much fresh goodness as possible because some of the fruit and vegetables are not available in our country. Or they taste like soap.
At that moment I still didn’t know what snacks I will be making in the evening and I planned to think about it later. A couple of minutes into the process of choosing goods, we bumped into a mountain of beautiful pineapples with a discount sign on them (second moment). After that everything happened really fast.
My mind started generating ideas like crazy: “I can use that pineapple for an appetizer”, “I can slice it and put something on top like I did with the Cranberry Chicken Salad served on apple slices”. BOOM. It was the third and final moment which cemented the choice of the appetizer for that night.
The only thing that was missing – a type of salad I’ll put on my pineapple slices. I needed to wait like 10 seconds until my next AHA moment: “I can use avocados because they are so ripe and delicious here”. Nice! We are literally having an avocado smoothie every single day thanks to an abundance of ripe avocados in Tenerife.
Being a carnivore I am, this salad also had to have some meat in it. “Chicken”, my hubby whispered. “We can get a rotisserie one and make this one quick”. Thanks, hubs! That’s literally how this Avocado Chicken Salad served on pineapple slices was born.
I won’t lie. The crazy popularity of my salad topped apple slices (455.000 repins on Pinterest) played its role in this whole thing. Unconsciously, I want to repeat this success so my decisions on what to make may be biased. I thought, ok, if I make these pineapple slices and they are good, I’m repeating them the next day and posting on the blog. AND THEY ARE AWESOME.
In fact, this Avocado Chicken Salad is so divine that we finished it 5 minutes into the movie. Oops. Pineapple complements the salad so well. These two are meant to be together. Seriously.
We loved that these salad topped pineapple slices are so comfortable to eat. Just grab one, holding by its skin, open your mouth… One bite and it’s gone! Well, everything except the skin. I wouldn’t recommend to eat it, ha!

Avocado Chicken Salad on Pineapple Slices
- 1 1/2 cups finely chopped cooked chicken
- 1 large avocado , cubed
- 1/2 cup finely chopped red onion
- 1/2 cup finely chopped celery
- 1/4 cup chopped walnuts
- 2 tablespoons lime juice
- salt and pepper , to taste
- 1/4 cup mayo
- 1 medium pineapple , halved and cut into triangles (check out the video above)
- finely chopped cilantro or parsley , for garnish
- In a bowl, add the chicken, avocado, red onion, celery, walnuts, lime juice, salt and pepper, mayo, and stir to combine.
- Serve the avocado chicken salad on pineapple slices and garnish with some chopped parsley or cilantro. Enjoy!

Oh my goodness, I love this so much! I was surprised several years ago to realize that I love the flavor of pineapple in chicken salad, but using the pineapple as a base makes it the perfect little party food! So creative and festive!
