Every Easter I try to come up with some new ideas on how to serve eggs on the table. This year I made these beautiful Avocado Deviled Eggs with smoked salmon! Sorry for posting it only now, a month after the holiday, but hey, it’s not necessarily an Easter recipe. I love having hard boiled eggs for breakfast all year round! It’s a perfect meal to start your day with. Moreover if we are talking about something more interesting than just simple boiled eggs – like this improved version with avocado and salmon!

If I haven’t mentioned this already, I am a huge fan of avocado. Sorry if I am saying this for the 100th time, my memory is going nuts because of not getting enough sleep (baby with growing teeth, anyone?). So, avocado. I adore that bright green color, I love that creamy consistency, I am going crazy over that smooth, buttery taste! Moreover avocado is good for your body. It’s not like any other veggie out there. Yeah I know that technically it’s a fruit or even a berry, but I’ve considered it to be a vegetable all my life! I have tons of avocado recipes on this blog. These avocado deviled eggs were a big hit at my Easter table. Even those relatives, who are not too keen on eggs, enjoyed these little green guys, complimenting me with their mouths full! I am really happy with my decision to add some smoked salmon on top. It goes so well with the creamy avocado!

The recipe itself is quick, easy and requires not too much ingredients. All you need is a ripe avocado and some smoked salmon! I had to ripen my avocados for few days, because it’s almost impossible to buy ones in my country. When I want to make something using avocado, a salad or some sort of a dip, I have to buy them few days in advance so they would have enough time to ripen. Crazy, right? That’s a disadvantage of living in a Northern (not really, but close) country.

Avocado Deviled Eggs with Salmon

Ingredients
  • 6 large eggs, boiled, cooled, peeled, and cut in half
  • 1 large ripe avocado
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lime juice
  • 1 teaspoon fresh dill, finely chopped (plus more for garnish)
  • 1½ oz. cold-smoked salmon
  • salt and freshly ground black pepper, to taste
Instructions
  1. Carefully, scoop out the yolks from the eggs. Set white halves aside.
  2. Place the yolks, avocado, mayonnaise, mustard, lime juice, dill, and spices in a food processor. Process until blended and smooth. Scoop the mixture into a bag and pipe into the empty egg halves. Top each egg half with some smoked salmon and garnish with some dill. Enjoy!
