As the weather gets cooler, I start thinking about hearty, warming soups. And some of the best ones I know are Mexican soup recipes. South of the border, they really know how to pack their soups with flavor, making Mexican soups zingy, spicy, savory, and utterly delicious. Here are 15 of the best Mexican soup recipes on my radar.

1. Pozole

Made with hominy and pork, this soup is an Aztec dish predating Columbus in the Americas. Made with three types of chiles for smokiness, heat, and fruitiness, plus crunchy fresh vegetables for topping.
