Summer is calling, and with it, one of my favorite seasonal ingredients. Cherry tomatoes are such sweet little bites of summery goodness, and it’s a rare summer day that goes by without me eating at least a few as a quick healthy snack. Here are some of my most cherished cherry tomato recipes for when you want to try something more complex to make the most of them.

1. Pesto Salmon with Cherry Tomatoes

Anyone who reads my blog regularly will know how much I love salmon! In this recipe, I used the piquancy of cherry tomatoes to counterpoint the richness of the fish. It was great.

2. Roasted Cherry Tomato Recipe

This recipe is so simple, but it’s a great thing to do when you’ve got a glut of cherry tomatoes in the summer. Anyone who grows their own will know what I mean! Simply roast a whole batch until tender. Any leftovers can be turned into sauce (see below).

3. Roasted Cherry Tomato Sauce

Wondering what to do with all those cherry tomatoes you cooked in the roasted cherry tomato recipe? Turn them into sauce! The added sweetness of cherry tomatoes makes them brilliant in a marinara-type sauce, and roasting intensifies the flavor even more.

4. Pasta with Cherry Tomatoes

The Italians do simplicity the best, and with such good produce you can understand why. There’s scarcely anything more in this pasta than olive oil, tomatoes, basil, and parmesan and it taste SO good.

5. Baked Gnocchi with Spinach

One for the cooler summer days, though I admit I could eat this during a heatwave as well! Rich and cheesy, yet not cloying; the cherry tomatoes cut through the oozing cheese to give it a fresh taste despite the heartiness.

6. Green Olive Chicken with Cherry Tomatoes

All the Mediterranean flavors in this dish! It’s a simple tray bake, but it works so well. A really great summer dinner, easy to throw together after work.

7. Zucchini and Tomato Tartlets with Ricotta

I made these a while back as finger food for a summer party, and they were a great hit. You can prepare everything in advance and just bake them before your guests arrive. Super-easy and great fun.

8. Summer Tomato Curry

A gorgeous Kashmiri curry, author Sunny Gandara says it is the “perfect summer tomato curry” and I can’t disagree. Like many authentic Indian dishes, you have to plan in advance a little, but it’s worth it.

9. Pickled Cherry Tomatoes

Yet another way to deal with a glut! These little gems are incredibly easy to make, and like all pickles, very shelf stable and safe. They pop in your mouth for a sweet acidic bite – perfect with a platter of antipasti.

10. Cherry Tomato Couscous Salad

Mixing both roasted and fresh cherry tomatoes for the best of both worlds, this gorgeous salad almost looks too good to eat! Lots of fresh herbs and giant Israeli couscous complete the picture.

11. Confit Cherry Tomatoes

By cooking cherry tomatoes in olive oil, you get two wonderful things in one. The tomatoes themselves, plus the oil they’re cooked in, infused with all the wonderful sweet piquancy of the tomatoes.

12. Sweet Cherry Tomatoes with French Feta

The perfect match between sweet and salty; I could eat this all day long. French feta is made with cows milk rather than the Greek sheep’s milk, giving it a milder taste.

13. Roasted Cherry Tomato Soup

Another recipe using roasting to draw out the flavor even more, Canadian author Carleigh suggests making this with the last of the crop on an autumn day. I’ve also made it and eaten it chilled, like gazpacho, which was deliciously refreshing.

14. Cherry Tomato Gazpacho

And a real gazpacho recipe, using cherry tomatoes as the main base, along with onions, cucumbers, bell peppers and spices. Just don’t refer to it as cold soup in Spain…

15. Piyaz

This Turkish bean salad always contains tomatoes in some form. I sometimes make it with cherry tomatoes for extra sweetness and juiciness.

16. Cherry Tomato Bruschetta

Bruschetta is a Italian summer classic, and this recipe showcases cherry tomatoes in an authentic recipe. The tomatoes are lightly macerated and used to top grilled bread. Simple and addictive.
17. Butternut Squash and Cherry Tomato Crumble

Mixing a technique more usually used for desserts, this innovative British recipe reinvents a crumble topping in a savory version, covering the cherry tomato and squash interior.

18. Cherry Tomato Pickle

A more unusual way to make a cherry tomato preserve, this Indian recipe is a beauty. The half-cooked cherry tomatoes pop in your mouth, releasing a heavenly spiciness.
