  • Mushrooms need airflow – Store them in a ventilated or breathable container, like a paper bag, away from high-moisture areas like the produce drawer. Keep them on a dry shelf in the fridge for up to 5 days.
  • Don’t soak them – Maitakes are delicate and spongy. Soaking or heavy washing can lead to excess water absorption, which makes achieving a crisp or caramelized texture difficult. Instead, brush away visible dirt, clean with a damp paper towel, or rinse quickly.
  • Skip the chopping – Hen of the woods mushrooms are excellent when cooked as a whole cluster, but if you need to break them down, your fingers will do the trick. All you have to do is gently pull them, and they’ll come apart easily.
