Ingredients

This recipe uses pantry ingredients and the flavors you might find in classic cobblers or pies, but with much less prep.

  • Brown Sugar – The flavor of brown sugar is different from white, so if you need to swap something in, I’d recommend turbinado or coconut sugar.
  • Shredded Coconut
  • Cold Butter – A great way to ensure the butter stays cold is to chop it up and then stick it into the freezer while you finish the rest of your prep.
  • Vanilla Extract
  • Ground Cinnamon
  • Peaches – Make sure to use ripe, but not overripe peaches. Gently squeeze them, if they have a slight give then they’re ready.

Of course I definitely recommended topping it with a scoop of vanilla ice cream. It’s a combination that guarantees you’ll have the perfect summer treat to enjoy and share.

Instructions

The best part about making peaches in the air fryer is how simple and quick it is. All you need is your air fryer basket or a baking pan that fits inside. My Cosori 5.8 model can hold a standard 8” round baking pan, which is much easier to clean after cooking than the air fryer basket.

I’d recommend checking to see if your air fryer can fit a standard pan too. They’re usually higher quality than the small ones sold as accessories for your model.

When you’re ready to cook, start by placing the shredded coconut, brown sugar, butter, vanilla, and cinnamon in a food processor or blender. Pulse until it forms a crumbly mixture that holds together when pressed.

Brown sugar coconut topping

Halve your peaches and discard the pits. Fill the halves with the brown sugar coconut mixture and place them in the baking sheet or basket. My model can fit 6 halves in a pan, so I cooked in two batches.

Air fry at 375°F (190°C) for 15 minutes. They should be golden brown on top. Remove and cook the other batch.

Serving and Storage

The best way to enjoy your air fried peaches is warm with a scoop of vanilla ice cream right on top. They’re delicious, soft, and perfectly sweet. If you need less servings, feel free to half or quarter the recipe.

Leftovers can be stored in an airtight container for 2-3 days in the fridge. Reheat them gently in the stove or air fryer for just a couple minutes at 375°F, or for 30 seconds to a minute in the microwave.

This recipe is a great way to enjoy that grilled fruit type dessert, but so much easier and quicker. Of course I have lots of other delicious summer treats you should also check out while you’re here!
