1 1/2cupsdiced fresh apricots, approx 4-5 apricots, depending on the size
For The Dressing:
2tablespoonsextra virgin olive oil
2tablespoonsfresh basil leaves, finely chopped
2tablespoonsfresh lime juice
1/4teaspoonlime zest
1tablespoonhoney
salt and freshly ground black pepper, to taste
Instructions
In a small jar with a lid, combine the olive oil, basil, lime juice, lime zest, and honey. Cover and shake until mixed well. Taste for seasoning and add salt and pepper as needed.
Gently toss all ingredients together in a large bowl. Toss with the dressing and serve.
