Cucumber and Tomato Salad

- 1/2 English cucumber cut in chunks
- 1 regular cucumber peeled, sliced
- 1/2 small red onion thinly sliced
- 2 large tomatoes sliced
- 3 medium tomatoes cut in chunks
- 1/2 cup cherry tomatoes halved
- 1 small bunch of chives finely chopped
- 1 small bunch of parsley roughly chopped
- 3 tbsp extra virgin olive oil
- 1 tbsp wine vinegar
- salt and pepper
Pick the leaves off the parsley and chop roughly.
Mix with all the other ingredients and toss, so that the vegetables are well coated in the oil and vinegar.
Season generously and chill for 20 minutes.
Toss together again lightly before serving.
