Ingredients

  • 1/2 English cucumber cut in chunks
  • 1 regular cucumber peeled, sliced
  • 1/2 small red onion thinly sliced
  • 2 large tomatoes sliced
  • 3 medium tomatoes cut in chunks
  • 1/2 cup cherry tomatoes halved
  • 1 small bunch of chives finely chopped
  • 1 small bunch of parsley roughly chopped
  • 3 tbsp extra virgin olive oil
  • 1 tbsp wine vinegar
  • salt and pepper

Instructions

  • Pick the leaves off the parsley and chop roughly.
  • Mix with all the other ingredients and toss, so that the vegetables are well coated in the oil and vinegar.
  • Season generously and chill for 20 minutes.
  • Toss together again lightly before serving.
