The Granola. In a medium mixing bowl, combine the maple syrup, coconut oil, cinnamon, vanilla extract, and salt. Stir in oats, ground flaxseed, and almonds.
Transfer the mixture to the lightly greased baking pan and press down using a spatula to create an even layer (see Notes).
Air fry at 325°F for 8 minutes, stirring halfway through. Once the time is up, leave the granola inside the air-fryer for 5 minutes before opening. Then remove it from the air fryer and let cool completely. Once the granola has cooled down it will be crunchy.
The Blueberry Yogurt for One Serving. In a high-speed blender, add the Greek yogurt, frozen blueberries, sliced banana, peanut butter, and maple syrup. Blend until smooth.
Pour your smoothie into a bowl and top with ¼ cup of the granola and whatever other toppings you like (fresh berries, nuts, chia seeds, coconut flakes, hemp seeds, nuts)!
Store granola in an airtight container for up to 10 days.

It’s great if you can find a baking pan that will fit your air fryer model. Otherwise, you can line air fryer basket with parchment paper and pour granola mixture on it.
