How to Cook Risotto

Learning how to make risotto is a bit like learning to meditate; it requires patience, a bit of attention, and a willingness to stay in the moment. Many people are intimidated by the constant stirring, but I find it incredibly therapeutic. There is something magical about watching simple grains of rice transform into a creamy, luxurious masterpiece just by adding a splash of stock at a time. Once you master the basic technique, a whole world of flavor opens up to you.

What is Risotto?

Risotto is a northern Italian staple that has earned a permanent place in the global culinary canon as the ultimate sophisticated comfort food. Unlike other rice dishes that aim for fluffy, separate grains, risotto relies on the high starch content of specific Italian varieties to create its signature velvety texture. Historically, it emerged in the rice-growing regions of the Po Valley, where local cooks perfected the technique of toasting the rice in fat before slowly simmering it in broth.

What Type of Rice for Risotto?

The choice of rice is important if you want a successful result. Use a short or medium-grain variety like Arborio, Carnaroli, or Vialone Nano. Carnaroli is often hailed as the king of risotto rice because it has a very high starch content and a firm structure that resists overcooking. These grains are packed with amylopectin, which is released during the stirring process to create that famous creaminess without needing a drop of heavy cream.

The basic method involves sautéing aromatics like shallots or onions, toasting the rice until the edges are translucent, and then gradually adding hot stock while stirring constantly. The final step, called the mantecatura, involves beating in cold fat, like butter and parmesan cheese, off the heat to give the dish its glossy, decadent finish.
