Smashed Broccoli Parmesan

Ingredients

  • 1 head broccoli
  • 2 tbsp olive oil
  • 1 lemon zest only
  • 1 tsp garlic powder
  • 1/2 cup parmesan grated
  • salt and pepper

Instructions

  • Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  • Break the broccoli into florets and add to a steamer basket.
  • Steam for 5 minutes until tender to a fork, but not mushy. Set aside to cool a little.
  • In the meantime, mix the olive oil with the lemon zest and garlic powder, and season generously.
  • Toss the steamed broccoli in the seasoned olive oil.
  • Spread the broccoli out over the prepared baking sheet. Press each floret firmly with the base of a heavy glass to smash and flatten.
  • Sprinkle over the parmesan and bake for about 20 minutes, until golden and crisp.
