Smashed Broccoli Parmesan

- 1 head broccoli
- 2 tbsp olive oil
- 1 lemon zest only
- 1 tsp garlic powder
- 1/2 cup parmesan grated
- salt and pepper
Preheat the oven to 425°F. Line a baking sheet with parchment paper.
Break the broccoli into florets and add to a steamer basket.
Steam for 5 minutes until tender to a fork, but not mushy. Set aside to cool a little.
In the meantime, mix the olive oil with the lemon zest and garlic powder, and season generously.
Toss the steamed broccoli in the seasoned olive oil.
Spread the broccoli out over the prepared baking sheet. Press each floret firmly with the base of a heavy glass to smash and flatten.
Sprinkle over the parmesan and bake for about 20 minutes, until golden and crisp.
