Scrambled Eggs with Sour Cream

- 4 eggs
- 1 oz cooked ham diced
- 1 tbsp butter
- 1 tbsp sour cream
- 1 tbsp chives chopped
- 1 tsp parmesan grated
- salt and pepper
Whisk the eggs with the chopped ham.
Melt the butter in a pan over very low heat.
Add the eggs and cook slowly, stirring constantly, for about 10 minutes, until done to your liking.
Turn off the heat and stir in the sour cream.
Scatter over the chives and grate a little parmesan over the top. Season to taste and serve with bread or toast on the side.
