Scrambled Eggs with Sour Cream

Ingredients

  • 4 eggs
  • 1 oz cooked ham diced
  • 1 tbsp butter
  • 1 tbsp sour cream
  • 1 tbsp chives chopped
  • 1 tsp parmesan grated
  • salt and pepper

Instructions

  • Whisk the eggs with the chopped ham.
  • Melt the butter in a pan over very low heat.
  • Add the eggs and cook slowly, stirring constantly, for about 10 minutes, until done to your liking.
  • Turn off the heat and stir in the sour cream.
  • Scatter over the chives and grate a little parmesan over the top. Season to taste and serve with bread or toast on the side.
