Ingredients

For the Filling:

  • 3 cups fresh or frozen raspberries
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract

For the Crumble Topping:

  • 1 cup rolled oats
  • ½ cup all-purpose flour
  • ½ cup coconut sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter

Instructions

Prepare the Filling:

  • Mix the raspberries with the granulated sugar, cornstarch, lemon juice, and vanilla extract until well combined. Cook for about 3-4 minutes or until the sauce is thickened.
  • Pour the raspberry mixture into a baking dish.

Make the Crumble Topping:

  • Mix the rolled oats, flour, brown sugar, cinnamon, and salt in a separate bowl.
  • Pour the melted butter over the dry ingredients and mix until the mixture is crumbly and well combined.

Assemble the Crumble:

  • Evenly distribute the crumble topping over the raspberry filling in the baking dish.

Bake:

  • Bake in the preheated oven at 350°F(175°C) for 30-35 minutes, or until the topping is golden brown and the filling is bubbling around the edges.

Cool and Serve:

  • Allow the crumble to cool for about 10 minutes before serving. Enjoy warm with ice cream or whipped cream!
