Ingredients

  • 2 fillets salmon about 8 oz each
  • 1 small bunch fresh dill
  • 1 lemon juice and zest
  • 1 tsp grainy mustard
  • 1 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 cup dry white wine
  • salt and pepper

Instructions

  • Preheat the oven to 350°F.
  • Season the salmon all over and add to a baking dish.
  • Melt the butter in the oil, mix with the lemon zest, juice, mustard and half the dill. Pour over the salmon, then pour the white wine over as well.
  • Cover with foil and roast for about 15 minutes.
  • Serve hot, garnished with the remaining dill and the juices from the baking dish poured over. Serve with salad or green vegetables.
