Lemon Dill Salmon

- 2 fillets salmon about 8 oz each
- 1 small bunch fresh dill
- 1 lemon juice and zest
- 1 tsp grainy mustard
- 1 tbsp unsalted butter
- 1 tbsp olive oil
- 1/2 cup dry white wine
- salt and pepper
Preheat the oven to 350°F.
Season the salmon all over and add to a baking dish.
Melt the butter in the oil, mix with the lemon zest, juice, mustard and half the dill. Pour over the salmon, then pour the white wine over as well.
Cover with foil and roast for about 15 minutes.
Serve hot, garnished with the remaining dill and the juices from the baking dish poured over. Serve with salad or green vegetables.
