Ingredients

  • 2 baking potatoes about 8-10 oz each
  • 2 tbsp olive oil
  • 6 oz mushrooms sliced
  • 1/2 red bell pepper sliced
  • 2 cloves garlic peeled and sliced
  • 2 tbsp green olives pitted and sliced
  • 1/2 cup corn kernels
  • 1 small bunch parsley chopped
  • 2 tbsp butter
  • 1/3 cup cheddar grated
  • salt and pepper

Instructions

  • Preheat the oven to 400°F.
  • Rub the potatoes with olive oil and season. Place in a baking dish and bake, uncovered, for about 1 hour, turning once. They should have crispy skins and soft flesh.
  • In the meantime, heat the olive oil in a pan over medium heat. Add the mushrooms and peppers and cook for about 6-8 minutes.
  • Add the garlic, olives, and corn and cook for a further 2-3 minutes. Leave to cool a little, then stir in the parsley and season to taste
  • Split the potatoes in half and scoop out the flesh. Mash until smooth with the butter and cheese, then refill the potato skins.
  • Top with the mushroom filling and serve hot.
