- 2 baking potatoes about 8-10 oz each
- 2 tbsp olive oil
- 6 oz mushrooms sliced
- 1/2 red bell pepper sliced
- 2 cloves garlic peeled and sliced
- 2 tbsp green olives pitted and sliced
- 1/2 cup corn kernels
- 1 small bunch parsley chopped
- 2 tbsp butter
- 1/3 cup cheddar grated
- salt and pepper
Preheat the oven to 400°F.
Rub the potatoes with olive oil and season. Place in a baking dish and bake, uncovered, for about 1 hour, turning once. They should have crispy skins and soft flesh.
In the meantime, heat the olive oil in a pan over medium heat. Add the mushrooms and peppers and cook for about 6-8 minutes.
Add the garlic, olives, and corn and cook for a further 2-3 minutes. Leave to cool a little, then stir in the parsley and season to taste
Split the potatoes in half and scoop out the flesh. Mash until smooth with the butter and cheese, then refill the potato skins.
Top with the mushroom filling and serve hot.
