Ingredients
2ripebananas
1heaping cup (90g)instant oatmeal
1/4cup (35g)sunflower seeds
1/4cup (20g)coconut flakes
1/4cup (40g)raisins
1/2teaspooncinnamon
a pinch ofsalt
Instructions
Mash the bananas with a fork. In another bowl, add all the remaining ingredients. Add the mashed bananas and mix well. Let the mixture rest for about 5 minutes.
Line a baking sheet with parchment paper. Preheat an oven to 350°F (170°C).
Using a tablespoon (I used heaping) spoon the mixture into your hands and form cookies. Arrange on the prepared baking sheet and cook for 15-17 minutes until golden brown. Let cool. Enjoy!

This recipe is customizable. Sunflower seeds can be substituted with pumpkin seeds; raisins can be substituted with dried cranberries.
