Ingredients

  • 4 eggs
  • 1/3 cup Greek yogurt
  • 1/2 tsp Dijon mustard
  • 1 tsp capers drained
  • 1/4 tsp garlic powder
  • 1 tbsp scallions chopped
  • 1/4 tsp smoked paprika
  • salt and pepper

Instructions

  • Bring a pan of water to a boil. Boil the eggs for 10 minutes, then drain and plunge into iced water.
  • Meanwhile, mix the yogurt, mustard, capers, and garlic powder together.
  • Peel the eggs and halve lengthwise.
  • Add the yolks to the yogurt mixture. Blend or mash with a fork until very smooth. Season to taste.
  • Fill the cavities of the hard boiled eggs with the creamy deviled mixture.
  • Sprinkle with the scallions, dust with paprika, and serve hot or cold.
