Ingredients

For the jerk marinade

  • 1/2 tsp allspice
  • 1/4 tsp cinnamon
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 1 tsp dried thyme leaves
  • to taste hot fresh chili peppers finely chopped
  • 1 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 lime juice of
  • salt

For the sandwich

  • 2 small chicken thighs boneless, skin on
  • jerk marinade above
  • 2 burger buns
  • coleslaw
  • BBQ sauce
  • fresh avocado
  • fresh cilantro

Instructions

  • Mix all the ingredients for the marinade together. Smother all over the chicken thighs and leave to marinate for at least 2 hours, preferably overnight.
  • Heat a grill or ridged griddle pan until very hot. Grill the chicken for about 3-4 minutes each side, until cooked through.
  • Spread the buns with the BBQ sauce and add the coleslaw and avocado. Top with the chicken and finish with the cilantro. Close the buns and serve hot.
