- 1 ½ lb fresh green beans trimmed
- 1 can chopped tomatoes
- 1 medium onion chopped
- 2 medium potatoes cut into big chunks
- ¼ cup olive oil
- 2 garlic cloves minced
- ½ tbsp sugar
- 1 tsp salt
- ¼ tsp black pepper
- 2 tbsp chopped parsley
- ½ cup water if necessary
Wash and trim the green beans, chop the onion, and cut the potatoes into large chunks.
In a large pot, heat the olive oil over medium heat. Add the chopped onion to the pot and sauté until the onion becomes soft and translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Add the potato chunks and sauté for about 3-4 minutes, until they look shiny.
Add the green beans, pour in the chopped tomatoes (with their juice), and add parsley to the pot. Add the sugar, salt, and black pepper. Stir everything together.
Lower the heat, cover the pot, and let the mixture simmer for about 45 minutes, stirring occasionally. If the stew becomes too dry during cooking, add ½ cup of water to keep it moist.
Cook until the green beans and potatoes are tender and the sauce has thickened.
Serve hot or at room temperature.
