Ingredients

  • 2 tablespoons (30 ml) olive oil
  • 2 yellow onions , thinly sliced
  • ½ teaspoon salt , divided
  • 1 tablespoon fresh thyme leaves
  • 8 oz. (225 g) cremini mushrooms , cleaned, dried and sliced
  • 2 cloves garlic , minced
  • 1 tablespoon (15ml) balsamic vinegar
  • Black pepper , to taste

Instructions

  • Heat the olive oil in a large skillet over medium-low heat and add the sliced onions. Stir and sprinkle with ¼ teaspoon of salt. Sauté the onions, stirring occasionally, until begin turning golden-brown, about 20 to 30 minutes. (If the skillet gets too dry, then you can add a little oil.) When the onions are almost caramelized, sprinkle fresh thyme over them. Stir to combine.
  • Once the onions are done,add the sliced ​​mushrooms to the skillet. Increase the heat to medium and cook, stirring occasionally, until the mushrooms are soft and have released their moisture, about 8 minutes.
  • Add in the garlic, balsamic vinegar, remaining ¼ teaspoon of salt, and black pepper. Stir to combine then let cook for a few more minutes before serving.
