- 2 tablespoons (30 ml) olive oil
- 2 yellow onions , thinly sliced
- ½ teaspoon salt , divided
- 1 tablespoon fresh thyme leaves
- 8 oz. (225 g) cremini mushrooms , cleaned, dried and sliced
- 2 cloves garlic , minced
- 1 tablespoon (15ml) balsamic vinegar
- Black pepper , to taste
Heat the olive oil in a large skillet over medium-low heat and add the sliced onions. Stir and sprinkle with ¼ teaspoon of salt. Sauté the onions, stirring occasionally, until begin turning golden-brown, about 20 to 30 minutes. (If the skillet gets too dry, then you can add a little oil.) When the onions are almost caramelized, sprinkle fresh thyme over them. Stir to combine.
Once the onions are done,add the sliced mushrooms to the skillet. Increase the heat to medium and cook, stirring occasionally, until the mushrooms are soft and have released their moisture, about 8 minutes.
Add in the garlic, balsamic vinegar, remaining ¼ teaspoon of salt, and black pepper. Stir to combine then let cook for a few more minutes before serving.
