Cucumber Salad

- 1 tbsp sesame seeds
- 1 English cucumber sliced
- 1 scallion sliced
- 1 tbsp ginger peeled and minced
- 2 cloves garlic peeled and minced
- 1 tbsp black rice vinegar
- 2 tbsp soy sauce
- 1 tbsp peanut butter
- 1 tbsp sesame oil
- 1 tsp chili paste or chili oil, or hot sauce
Add the sesame seeds to a small pan over medium-low heat. Toast for about 3-4 minutes until golden brown and fragrant.
Whisk the vinegar, soy sauce, peanut butter, sesame oil and chili paste in a large mixing bowl.
Add the garlic, scallions, and ginger and mix.
Add the cucumber slices and fold in. Optionally chill for up to 1 hour before serving.
Scatter over the sesame seeds directly before serving.
