Blend the onions, tomatoes, garlic, ginger, and chilis to a paste
Add the oil to a large pan over medium heat. Add the cumin, mustard seed, cinnamon, and bay leaf and cook for 2-3 minutes until fragrant.
Add the spice paste and cook for about 10 minutes, stirring frequently until thickened.
Add the turmeric, asafoetida, coriander, and chickpeas. Top up with about 1/2 - 1 cup of water, to your desired consistency. Season to taste.
Bring to a boil and simmer for about 15 minutes. Add the garam masala and roughly mash a few of the chickpeas to help thicken the sauce.
Garnish with the cilantro and serve with the bhature flatbreads.
