Ingredients

  • 1 tsp olive oil
  • 1/2 red pepper sliced
  • 1/2 green pepper sliced
  • 1/2 yellow pepper sliced
  • 1 red onion peeled and sliced
  • 1/2 tsp cumin
  • 1/4 tsp red pepper flakes
  • 1 tsp Tabasco sauce or to taste
  • 1 cup chicken cooked and shredded
  • 1 cup refried beans
  • 1 cup cheddar cheese grated
  • 4 wheat tortillas

To serve

  • sour cream
  • guacamole

Instructions

  • Heat the oil in a pan over medium heat. Add the onion and bell peppers and cook for about 10 minutes until softened.
  • Add the cumin, chilli flakes, chicken and Tabasco sauce. Cook for a further 4-5 minutes.
  • Spread the refried beans on the tortillas and scatter two of them with half the cheddar.
  • Divide the chicken mixture between the two tortillas. Scatter over the remaining cheese and finish with the remaining tortillas, bean side down.
  • In a hot dry pan, fry the quesadillas for about 3-4 minutes on each side, until crisp and browned, and the cheese has melted, sticking them together.
  • Slice into wedges and serve hot, with guacamole and /or sour cream on the side.
