Instructions
Heat the oil in a pan over medium heat. Add the onion and bell peppers and cook for about 10 minutes until softened.
Add the cumin, chilli flakes, chicken and Tabasco sauce. Cook for a further 4-5 minutes.
Spread the refried beans on the tortillas and scatter two of them with half the cheddar.
Divide the chicken mixture between the two tortillas. Scatter over the remaining cheese and finish with the remaining tortillas, bean side down.
In a hot dry pan, fry the quesadillas for about 3-4 minutes on each side, until crisp and browned, and the cheese has melted, sticking them together.
Slice into wedges and serve hot, with guacamole and /or sour cream on the side.
