Caprese Skewers

Ingredients

  • 8 mini mozzarella balls (AKA bocconini)
  • 16 cherry tomatoes
  • 16 basil leaves
  • 2 tbsp extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • salt and pepper

Instructions

  • Start by making the balsamic reduction. Add the balsamic vinegar to a small pan and place over medium heat. Simmer for about 10 minutes until the mixture has reduced by about half. Leave to cool.
  • In the meantime, thread the tomatoes, bocconcini and basil leaves onto skewers, in the order: tomato, folded basil leaf, bocconcini, folded basil leaf, tomato.
  • Drizzle with olive oil and a little of the balsamic reduction and season with salt and freshly ground black pepper.
