Caprese Skewers

- 8 mini mozzarella balls (AKA bocconini)
- 16 cherry tomatoes
- 16 basil leaves
- 2 tbsp extra virgin olive oil
- 1/4 cup balsamic vinegar
- salt and pepper
Start by making the balsamic reduction. Add the balsamic vinegar to a small pan and place over medium heat. Simmer for about 10 minutes until the mixture has reduced by about half. Leave to cool.
In the meantime, thread the tomatoes, bocconcini and basil leaves onto skewers, in the order: tomato, folded basil leaf, bocconcini, folded basil leaf, tomato.
Drizzle with olive oil and a little of the balsamic reduction and season with salt and freshly ground black pepper.
