For the Buffalo Hot Sauce
- 3 tbsp butter
- 2 tbsp Tabasco Sauce
- 1 tbsp Tabasco Chipotle sauce
- 2 tbsp pickled jalapeños minced
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp Southwest seasoning
- 1 tsp honey
- 2 tbsp water
For the Buffalo Mac and Cheese
- 8 oz dried pasta
- 1 cup cooked chicken chopped
- 1/2 cup Buffalo hot sauce
- 2 tbsp flour
- 1 cup milk
- 1 1/4 cups chicken broth
- 6 oz cheddar cheese grated
For the Buffalo Hot Sauce
Melt the butter in a small pan over low heat.
Stir in both Tabasco sauces, plus the jalapeños.
Add the garlic, paprika, Southwest seasoning, and honey and simmer gently for 1-2 minutes, whisking until smooth. Season to taste.
For the Buffalo Chicken Mac and Cheese
Preheat the oven to 350°F.
Cook the pasta to "al dente", according to packaging instructions.
In the meantime, heat the Buffalo hot sauce in a pan over medium heat. Whisk in the flour and cook for about 2 minutes.
Add the milk and chicken stock and bring to a boil, whisking frequently. Cook for about 5 minutes until you see the mixture thicken slightly, then stir in two thirds of the cheese.
Mix the spicy cheese sauce with the cooked pasta and the chicken. Transfer to a baking dish and scatter over the remaining cheese.
Bake for about 20 minutes until bubbling at the edges and golden brown on top. Serve hot.
