Broccoli Cheese Casserole

- 1 head broccoli broken into florets
- 2 tbsp butter
- 2 tbsp flour
- 1/4 tsp nutmeg
- 1 cup milk
- 1/2 cup cream cheese
- 2 cups cheddar cheese shredded
- 1 tsp grainy mustard
- 4 tbsp parmesan cheese grated
- 1/2 cup breadcrumbs

Preheat the oven to
Steam the broccoli over a pan of boiling water for 4 minutes. Drain and plunge into an iced water bath. Drain again.
Melt the butter in a pan over medium heat. Add the flour and nutmeg and cook for about 2-3 minutes, whisking, until nutty smelling.
Add the milk in three batches, whisking all the time. Once all added, cook gently until smooth and thickened.
Add the cream cheese and cheddar and stir until melted. Season generously with lots of black pepper.
Mix the cheese sauce with the broccoli and transfer to a baking dish. Scatter with bread crumbs and parmesan.
Bake for about 20 minutes until bubbling at the edges and golden on top. Serve hot.
