BBQ Beef - Crockpot Shredded

Ingredients

For the BBQ beef

  • 2 lb beef roast, e.g. chuck in the piece
  • 0.5 cup red wine
  • 1 tbsp brown sugar
  • 1 tsp granulated garlic
  • 1 tsp liquid smoke
  • 1 tsp smoked paprika
  • 2 tsp kosher salt
  • 1 tbsp butter

To serve

  • buns or bread rolls
  • coleslaw
  • BBQ sauce
  • pickles
  • jalapeños
  • or whatever else you like!

Instructions

  • Mix the garlic, smoked paprika, salt and sugar together.
  • Rub it all over the beef roast, getting right into the crevices.
  • Put the meat into the crockpot and pour the wine and liquid smoke around it.
  • Add the butter on top of the meat.
  • Seal the crockpot and cook on LOW for 8-10 hours, until the meat is falling-apart tender.
  • Remove any lumps of fat or gristle, then shred the beef with two forks, mixing it in with all the cooking juices to keep it moist.
  • Serve the BBQ beef however you like! I chose to eat it stuffed into buns with coleslaw, BBQ sauce and pickles.
