Ingredients

  • 1 whole tilapia cleaned and gutted
  • 1 small onion peeled and minced
  • 4 cloves garlic peeled and minced
  • 1 tbsp fresh ginger peeled and minced
  • 1 small bunch cilantro chopped
  • 1 small bunch chives chopped
  • 1 green habanero chili seeded and minced
  • 4 tbsp olive oil
  • 1 lemon
  • salt and pepper

Instructions

  • Preheat the oven to 400°F.
  • Clean the tilapia. Gut it, scrape off all the scales, snip off the fins with kitchen scissors, and rinse well. Cut a few deep slits in the flesh on both sides.
  • Mix the onion, garlic, ginger, cilantro, chives, and chili. Juice half the lemon and add the juice and olive oil to the mix.
  • Season the tilapia with salt and pepper, then spread the mix over the outside of the fish, adding a little to the cavity as well. Place in a baking dish lined with parchment paper.
  • Slice the other lemon half and cover the exposed side of the tilapia with lemon slices. Bake for about 20-25 minutes, until the flesh comes easily away from the backbone.
  • Serve hot as a table centerpiece, with salad, rice, or potatoes on the side.
