Bring a pan of salted water to a boil. Cook the pasta according to packet instructions.
Heat the olive oil in a large pan over medium heat. Add the sausage meat and fry for about 5 minutes until golden brown.
Add the garlic, fennel seeds, and the white beans and cook for another 2-3 minutes.
Add the white wine, vinegar, mustard, and sun dried tomatoes. Cook for about 2 minutes until the alcohol has burned off.
Add the creme fraiche and spinach. Cook until the spinach has completely wilted.
Stir in the cooked pasta. Add a splash of the pasta cooking water to loosen the sauce if necessary. Season to taste with salt and lots of black pepper.
Sprinkle the parmesan cheese over the pasta and serve.
