Orange Poppy Seed Cottage Cheese Waffles
These cottage cheese packed waffles are not your ordinary unhealthy waffles. These are wheat-free (made with oats) and are literally packed with protein!
Servings: 4 people
- 4 eggs
- 1/2 cup old fashioned oats
- 1 1/2 cups (320g) cottage cheese , drained
- 3 tablespoons melted butter
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1 tablespoon grated orange zest
- 1 tablespoon poppy seeds
- 1/2 teaspoon vanilla extract
Preheat a waffle iron.
Place the eggs, oats, cottage cheese, butter, sugar, and salt in a blender and blend until smooth. Stir in the orange zest, poppy seeds, and vanilla extract.
Pour the mixture into the waffle iron and bake according to the iron’s directions (about 3-4 mins).
You can drizzle with honey or maple syrup, if desired. Enjoy!
