Healthy Instant Oatmeal Cookies (Sugar & Flour-Free)

These Instant Oatmeal Cookies make a perfect healthy breakfast, brunch or snack. Super easy to make and ready in under 30 minutes!

Ingredients

  • 2 ripe bananas
  • 1 heaping cup (90g) instant oatmeal
  • 1/4 cup (35g) sunflower seeds
  • 1/4 cup (20g) coconut flakes
  • 1/4 cup (40g) raisins
  • 1/2 teaspoon cinnamon
  • a pinch of salt

Instructions

  • Mash the bananas with a fork. In another bowl, add all the remaining ingredients. Add the mashed bananas and mix well. Let the mixture rest for about 5 minutes.
  • Line a baking sheet with parchment paper. Preheat an oven to 350°F (170°C).
  • Using a tablespoon (I used heaping) spoon the mixture into your hands and form cookies. Arrange on the prepared baking sheet and cook for 15-17 minutes until golden brown. Let cool. Enjoy!

Notes

This recipe is customizable. Sunflower seeds can be substituted with pumpkin seeds; raisins can be substituted with dried cranberries.
