  • 1 lb. (450g) raw cashews
  • 2 tablespoons unsalted butter
  • 1/4 cup honey
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground ginger
  • 3/4 teaspoon salt , divided
  • 2 tablespoons coconut sugar


  • Preheat the oven to350°F (175°C). Line a baking sheet with parchment paper.
  • Place the butter,honey, cinnamon, cardamom, cloves, ginger, and 1/2 teaspoon of salt in a large saucepan over medium heat. Heat until smooth and creamy, for about 2 minutes.
  • Remove from the heat and immediately add the cashews into the pot. Stir until the nuts are completely coated.
  • Spread the cashews in one layer on the baking sheet. Bake for 15 minutes, stirring the nuts every 5minutes to avoid burning.
  • Remove the cashews from the oven and sprinkle the coconut sugar and the remaining 1/4 teaspoon of salt on top. Toss lightly and spread the nuts on the baking sheet once again to cool completely. Store in an airtight container.
