Honey Roasted Cashews with Holiday Spices
These sweet roasted cashews are coated in holiday spice infused honey to create a perfect snack or an edible gift for your friends and family!
- 1 lb. (450g) raw cashews
- 2 tablespoons unsalted butter
- 1/4 cup honey
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground cardamom
- 1/8 teaspoon ground cloves
- 1/8 teaspoon ground ginger
- 3/4 teaspoon salt , divided
- 2 tablespoons coconut sugar
Preheat the oven to350°F (175°C). Line a baking sheet with parchment paper.
Place the butter,honey, cinnamon, cardamom, cloves, ginger, and 1/2 teaspoon of salt in a large saucepan over medium heat. Heat until smooth and creamy, for about 2 minutes.
Remove from the heat and immediately add the cashews into the pot. Stir until the nuts are completely coated.
Spread the cashews in one layer on the baking sheet. Bake for 15 minutes, stirring the nuts every 5minutes to avoid burning.
Remove the cashews from the oven and sprinkle the coconut sugar and the remaining 1/4 teaspoon of salt on top. Toss lightly and spread the nuts on the baking sheet once again to cool completely. Store in an airtight container.
