This smoked salmon, quinoa, and radish salad is packed with different flavors. Delicious, filling, and super nutritious, it makes a great spring or summer meal!

Ingredients
  • 1/2 cup quinoa , cooked and cooled
  • 1 can (14 oz. or 400g) red beans , drained
  • 1/2 red onion , chopped
  • 10 cherry tomatoes , halved
  • 8 medium radishes , sliced and halved
  • 2 oz. (60g) baby spinach
  • 5 oz. (140g) smoked salmon , sliced
For the dressing:
  • 2 tablespoons sesame oil
  • 1 teaspoon soy sauce
  • 1 teaspoon balsamic vinegar
  • 1 clove garlic , chopped
Instructions
  1. In a large bowl, combine red beans, onion, tomatoes, radishes, spinach, and smoked salmon. Add the cooked quinoa and stir well.

  2. To make the dressing, combine all the dressing ingredients in a small jar with a lid and shake to blend.

  3. Pour the dressing over the salad and toss well. Enjoy!
