Blueberry Zucchini Bread

For the bread:
  • 1 2/3 cups all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 2/3 cup sugar
  • 1/2 cup vegetable or canola oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup plain yogurt
  • 1 cup grated zucchini , drained
  • 1 teaspoon lemon zest
  • 1 cup blueberries , fresh or frozen
For the glaze:
  • 1 cup powdered sugar , sifted
  • 2 tablespoons fresh lemon juice
For sprinkling:
  • lemon zest (optional)
The bread:
  1. Preheat oven to 350°F. Grease a 9x5 inch loaf pan.

  2. In a bowl, combine the flour, cinnamon, soda, baking powder and salt.
  3. In another bowl, whisk together the sugar, oil, eggs until smooth. Stir in the vanilla extract, yogurt, and lemon zest. Gradually add the flour mixture until combined.
  4. Using a spatula, fold in the grated zucchini and blueberries, stirring gently just until combined.
  5. Pour the batter into the loaf pan and bake for 50 minutes to 1 hour until a toothpick inserted into the center comes out clean. Let cool.
The glaze:
  1. Mix the powdered sugar and lemon juice until combined. Pour the glaze over the bread.

  2. Sprinkle some zest over the top and enjoy!
