Heat 1 tablespoon of olive oil in a medium skillet over medium heat. Add shrimp, season with salt and pepper, and cook for about 1 minute on each side. Remove skillet from heat and set aside.
In a medium bowl, combine the yogurt, olive oil, lemon juice, salt and pepper. Set aside.
Place spinach, cherry tomatoes, red onion, cubed avocado and shrimp in a salad bowl and toss lightly. Drizzle with yogurt dressing and top with walnuts. Toss gently to coat and serve. Enjoy!
