3.In the same wok heat another tbsp oil. Add carrots and scallions, and stir-fry for 2 mins. Then swirl in the remaining oil. Add the snow peas and garlic, and stir fry for another 2-4 mins.
4.Return the cooked chicken to the wok along with the prepared sauce and cook, stirring gently, for 1-2 minutes or until the chicken and vegetables are well coated and hot.
