Let me start this post by saying that I am a picky person / a perfectionist. So is my hubby. This is true not only for food but in life overall. We can’t buy cheap things that are not perfect, we can’t do a mediocre job both for ourselves and for others, and the list goes on and on. While sometimes it can be considered as a good thing (for example when helping others to do something), often it tires me too much.

Sometimes I make food for the blog, take some photos, and find a tiny little detail that I don’t like when browsing through them later on my computer. I mean, those pics are GREAT but this one little detail… It pisses me off. I have to go back to the kitchen and make some new photos because otherwise, I won’t calm down. Yeah, that’s me. Let’s get back to the food situation, though. How this pickiness of mine affects me in everyday life? First and foremost, the same food gets boring too quickly for me. I find an awesome recipe, make it a few times and that’s it. My mind tells me to hop to the next one. Then I spend tons of time looking for another idea… And then the situation repeats indefinitely. It’s like a goddam groundhog day!

The recipe I have for you today somehow managed not to bore me for over a week now. That’s quite an achievement I should say. Meet super easy and quick to prepare Spinach Egg Muffins! They also require only 3 ingredients to make. Perfect for breakfast. I love starting my day with some eggs but all the possible versions (fried, boiled, scrambled, omelette) are not an option anymore. That’s when these beautiful spinach egg muffins stretch a helping hand! Eggs supply your body with protein and spinach… Everyone knows that it’s loaded with goodness, right?

These are great alone with a cup of tea or coffee or they can be served with a side of toast,  yogurt, or anything else! I also love taking a few together with me when I’m going outside for a long time. A perfect filling snack! Oh and one more thing. 3-Ingredient Spinach Egg Muffins

Ingredients

  • 4 large eggs
  • 2 oz. (60g) fresh baby spinach , finely chopped
  • 2 oz. (60g) Old fashioned oats
  • salt and pepper , to taste

Instructions

  • Preheat an oven to 350°F (175°C).
  • Spray a muffin tin with cooking spray.
  • Separate the egg whites and beat them until soft peaks form. Set aside.
  • In a bowl, combine together the egg yolks, spinach, and oats. Season with salt and pepper. Mix in the egg whites.
  • Pour the mixture into a muffin tin. Bake for 15-17 minutes. When done, allow the muffins to cool completely before taking them out. Enjoy!

    First — I think we’re sisters separated from birth — because I tend to be a perfectionist too! Second — I would never have thought to add oatmeal to this. Does it firm up the texture? — can you actually taste the oatmeal?

    Oh I totally hear you about the perfectionism – it’s tough when that one little thing gets under your skin, even if no one else knows it’s there.
