This Radish Cucumber Dill Salad reminds me of my childhood. My parents have been making it for more than two decades! No wonder, considering how AWESOME it is. This salad is crunchy and refreshing. For me, it marks the start of summer and fresh produce!
After last week’s slip-up, making comforting Chicken and Shrimp Alfredo with lots of cream (I loved it so much though), I am back to the fresh produce hunt for my series of seasonal summer dishes! This time I am going to share with you probably my favorite spring-summer salad which I made hundreds of times. I am talking about Cucumber Dill Salad with Radishes and Chives! Every single year this is the first salad I make using fresh ingredients, because all the veggies and herbs needed for it are among the earliest ones ready for picking. It is really easy to make and super healthy. What else do you need?
This Radish Cucumber Dill Salad is very popular in my country (I am from a small Lithuania). It’s clearly not my invention, every second family makes it regularly here. My parents have been making this salad for decades, so I got used to it and now I can’t imagine warm spring and summer days without this goodness!
As I already mentioned, this salad is also very healthy. Radishes are rich in Vitamin C, they prevent viral infections and help your digestive system. Cucumbers are a great way to stay hydrated, especially in summer. Dill is known for its bacteria-regulating effects, and chives are rich in Vitamins A and K. How is that for a combination?
I love how crunchy this Radish Cucumber Dill Salad is. Oh and it’s so refreshing! The basic sour cream dressing is the best. You don’t need anything else here, I’m telling you. There is no need to overcomplicate things, because radishes, cucumber, dill, chives and sour cream go so well together!
My hubby and I have already polished off two bowls of this delicious salad. I think we will go for a third one! You can serve this salad as a side for fish or meat, or you can enjoy it as a standalone dish. Perfect both ways!
Ingredients
- 1 English cucumber , halved lengthwise and thinly sliced
- 10-12 radishes , thinly sliced
- 1 small bunch dill , chopped
- 2 tablespoons chives , chopped
- 3/4 cup light sour cream
- Salt and pepper to taste
Instructions
- In a bowl, combine the cucumber, radishes, chives, and dill.
- In another small bowl, combine the sour cream with the salt and pepper.
- Pour the sour cream dressing on top and toss until everything is coated. Serve immediately, because the longer the salad sits, the more watery it becomes. Enjoy!
