Layered Chicken, Pear and Avocado Salad

I was too tired to prepare something more time consuming so I made this super easy salad for our dinner. And I’m glad of my choice! This tastes SO good and looks really pretty. Moreover, should I even mention the obvious fact that avocados and pears are full of good stuff? Everybody knows that!

A layered salad in a clear glass bowl shows off the colors and makes an eye appealing addition to the meal.

The avocado, pear, walnuts and chicken might sound a little strange, but together these four beautiful ingredients create an amazing combination of flavors and textures. Some creaminess, some sweetness… Yummy!

Ingredients
  • 2 chicken fillets (about 1 lb or 450g)
  • 1/2 teaspoon curry powder
  • 1 avocado
  • 1 pear
  • 3/4 cup walnuts
  • salt
  • pepper
  • lemon juice , for drizzling
  • oil , for frying
For the sauce
  • 1/2 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon curry powder
Instructions
  1. Cut the chicken fillets into small pieces. Season with salt, pepper and curry powder and fry until the pieces of chicken become a golden brown.
  2. Remove the chicken from the pan and let cool.
  3. Slice the pear and set aside.
  4. Slice the avocado and drizzle with a little lemon juice.
  5. Chop the walnuts.
  6. In a separate bowl, combine the mayonnaise, Dijon mustard and curry powder. Mix until smooth.
  7. In a serving dish, layer the pear, avocado, and chicken. Spread sauce over the top, and finally, sprinkle with chopped walnuts.
