These waffles are also a great way to sneak cottage cheese into your kids’ diet. Oh, and these are made with oats, making them wheat-free and gluten-free!

I’m a parent and I am also a working professional. The combination of the two is exhausting and let’s face it, juggling parenting duties and job duties, makes it hard to carve any amount of quality free time to spend with family. That being said, that free time is exactly what you and your family need. Constantly running is no way to spend all of your time and it really starts to put a strain on the family dynamics.
The free time can be as simple or as involved and difficult as you choose, however you must remember that this free time is an absolute need when it comes to your family! The time you carve out can be in the shape of a day at the beach, a week-long vacation or even just a nice breakfast together as a family.
Let’s face it, a family breakfast will be much easier to make happen initially than a vacation or a full day. Plus, creating family breakfast time on a regular basis can help build motivation for longer breaks. Not only will it help to build this motivation, but the time spent together around the table will also help you come together better as a family. Proved by yours truly!
When I was younger, waffles were like the ultimate weekend breakfast. Like the kind of breakfast that mom and dad made when they had lots of time on their hands on a Saturday. It was always such a big deal, even more so than pancake days.
I remember watching my parents pour that mixture into the hot waffle iron and just waiting until they could raise the handle to display the fun artwork that became my breakfast.
In fact, the last time I ever saw a waffle iron was when I was a kid. That is until I bought one for myself recently. Now you can’t stop me from making waffles with my new toy. And yes, I consider kitchen appliances toys. Everyone does that, right?
That’s right. It’s waffles all the time. Waffles for breakfast, waffles for dinner. Waffles any time of the day is perfectly acceptable in my book.
When it comes to this versatile treat, many people only think about your standard waffle. You know what I am talking about, the pseudo-pancake breakfast that you can buy in a bag or order from a busy chain breakfast restaurant. Did you know though, that you can make some fantastic variations and create a delicious alternative that is so much better than the original? Gone are the days of waffles being the pancakes sibling. There are some awesome recipes out there.
One of those recipes are these oh so delicious Orange Poppy Seed Cottage Cheese Waffles. I know what you are thinking. Cottage cheese waffles? Yes, cottage cheese and they are delicious! Not only are they delicious, but they are also healthy.
I know that cottage cheese doesn’t typically top the list of kids’ favorite foods, but you might be surprised to find that your kids will love these waffles. My two year old loves them, he thinks they taste delicious, plus they are also just fun. Those little waffle squares are like a perfect little cup made just for holding syrup.
Did I mention that they are also healthy? My husband can enjoy them as an after-workout snack because they have whopping 16 grams of protein and for those that avoid wheat, these waffles will work for you too because they are made with oats instead.
These orange poppy seed cottage cheese waffles are so much more than just waffles. The orange zest gives them a little extra flavor while filling your kitchen with a wonderful citrus aroma. Just thinking about it has me ready to make these waffles again.
How to Make My Cottage Cheese Waffles
Do you have a waffle iron? Because that is a need for this recipe. Like I said, I just bought my first waffle iron recently and have been surprised to realize that I am far from the only one that didn’t have this.
Once you are ready to give these delicious waffles a try, start out by firing up your waffle iron.
Get all of your ingredients gathered, mix them together into a smooth batter. Once that’s done, you can then add in the orange zest, poppy seeds, and the vanilla. It’s about at this point when your kitchen will start to smell amazing.
Next, pour your mixture into the heated waffle iron and bake for approximately 4 minutes. (This time is approximate, pursuant to the directions for your waffle iron.)
Once done, serve with your preferred topping, we go with either honey or syrup.
How easy was that, huh?
From now on these waffles will be my favorite way to eat cottage cheese (together with Syrniki). Do give them a try, guys!
Orange Poppy Seed Cottage Cheese Waffles
Ingredients
- 4 eggs
- 1/2 cup old fashioned oats
- 1 1/2 cups (320g) cottage cheese , drained
- 3 tablespoons melted butter
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1 tablespoon grated orange zest
- 1 tablespoon poppy seeds
- 1/2 teaspoon vanilla extract
Instructions
- Preheat a waffle iron.
- Place the eggs, oats, cottage cheese, butter, sugar, and salt in a blender and blend until smooth. Stir in the orange zest, poppy seeds, and vanilla extract.
- Pour the mixture into the waffle iron and bake according to the iron’s directions (about 3-4 mins).
- You can drizzle with honey or maple syrup, if desired. Enjoy!
