For the last half a year every single morning of mine starts with oatmeal. Before that, I usually had cereal thinking that it’s super healthy (you can call me a marketing victim, I deserve it) but my illusions were shattered after finding out about the crazy amounts of sugar it has.

Some cereals contain almost twice as much sugar as a favorite French breakfast pastry pain au chocolate. Can you believe it? Crazy world, crazy times. This fact frightens me keeping in mind how kids love them. Well, at least we need to check the amounts of sugar on the package before buying if there is no way to avoid cereals. My kid is too small yet so I don’t have to worry about it but if the situation won’t change (I highly doubt it will) I’ll have some decisions to make in the future.

Let’s get back to the oatmeal, though. There are a few ways I prepare it. First, I ALWAYS use a banana as a sweetener. The riper it is the better. Then, I either add unsweetened cocoa or the powdered peanut butter. The latter is my best discovery lately. It has 85% less fat calories than a traditional PB and is all natural! They didn’t pay me by the way, that’s my own opinion.

Why Oatmeal Is Good For You?

Well, first of all, oats are gluten-free. I’m not gluten intolerant but it does make me tired and bloated sometimes. Oats are also SUPER NUTRITIOUS. I won’t even name all the vitamins, minerals, and antioxidants these little guys have. My hands would get tired from typing.

Oatmeal is a great breakfast option because it’s very filling so you get hungry slower. If you want to lose some weight that’s exactly what you should be having for breakfast. Healthy + filling + low in calories = Perfection!

A week ago I found out that you can make absolutely healthy cookies using oatmeal too. No flour, no added sugar, nothing! Only pure healthy stuff. I loved that idea because they are great to take with you anywhere and have a healthy snack when your stomach is rumbling avoiding fast food. These Instant Oatmeal Cookies also won’t melt in the summer sunshine. Perfect!

Ingredients

  • 2 ripe bananas
  • 1 heaping cup (90g) instant oatmeal
  • 1/4 cup (35g) sunflower seeds
  • 1/4 cup (20g) coconut flakes
  • 1/4 cup (40g) raisins
  • 1/2 teaspoon cinnamon
  • a pinch of salt

Instructions

  • Mash the bananas with a fork. In another bowl, add all the remaining ingredients. Add the mashed bananas and mix well. Let the mixture rest for about 5 minutes.
  • Line a baking sheet with parchment paper. Preheat an oven to 350°F (170°C).
  • Using a tablespoon (I used heaping) spoon the mixture into your hands and form cookies. Arrange on the prepared baking sheet and cook for 15-17 minutes until golden brown. Let cool. Enjoy!

Notes

This recipe is customizable. Sunflower seeds can be substituted with pumpkin seeds; raisins can be substituted with dried cranberries.

    The Mr. and I start our morning everyday with a bowl of oatmeal topped with fresh blueberries and almond slivers. The blueberries are enough to sweeten it for us. I find that this helps stabilize my blood sugar for the rest of the day. If I were to have cereal. . .I would spend the rest of the day trying to stabilize my blood sugar. . .no thank you!! Loving these little cookies especially as an on-the-go version of my oatmeal. I bet they would taste lovely with some blueberries too.

      I LOVE blueberries. When they are in season (July-August in my country) I have them every single day. The oatmeal with blueberries is heavenly 🙂

    I had the same realization about cereal: I’ll take a chocolate-filled croissant instead, thank you very much. I’ve been eating much more oatmeal these days: it’s much more filling and heart healthy. These oatmeal cookies are packed with so many healthy goodies that I can’t wait to try them!5 stars

    I don’t eat bananas so I never have any in the house, but these cookies might be reason enough to buy a bunch. I’m still guilty of eating super sugary cereal, it’s the one way I can cheat and maintain a healthy weight. 🙁

    These cookies sound almost too good to be called a cookie! The only downfall is that I’m allergic to bananas – is there anything I could use to replace them?

      Yes! They barely can be called cookies 🙂 What about bananas, I am not sure Kelli… You could replicate the sweet taste with dates or figs but I don’t know about the texture…

      I don’t feel like these cookies need any more sweetness (if you use ripe bananas) but of course, you can 🙂

    Just made these, not sure what I expected but they really aren’t sweet. The sunflower seeds took away from the sweetness and I used unsweetened coconut, so no sweetness there, maybe my bananas weren’t ripe enough, for 171 calories each I was hoping to satisfy my sweet tooth!

    Hi, Jovita! Thanks for sharing such a simple yet delicious recipe❣️ I have made it today and adapted the recipe to the ingredients I have on hand: 1 ripe banana, extra thick oatmeal(used 45grams) and raisins. After baking in the oven for 17 minutes, the cookies are still very wet. So I leave them in the oven for 16 more minutes and it turned out great ????????. Thx for sharing ❣️5 stars
